BBQ Pulled Jackfruit Tacos

Ingredients

  • 7 1/2 cups (or 3 20oz. cans) of jackfruit in brine
  • 1 1/2 cups organic ketchup
  • 1/4 cup pure maple syrup
  • 1/4 cup apple cider vinegar
  • 2 Tbsp molasses
  • 2 Tbsp soy sauce
  • 2 Tbsp Worcestershire sauce
  • 2 tsp hot sauce
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 1/2 Tbsp dry mustard
  • 1/2 tsp garlic powder
  • pear salsa
  • pickled red onions
  • cilantro
  • red pepper flakes
  • lime juice
  • purple cabbage
  • cotija cheese
  • chipotle mayo
  • pomegranate seeds
  • orange slices
  • pickled jalapeños
  • sour cream

Cooking Instructions

  1. Heat frozen CAULIPOWER Cauliflower Tortillas on a skillet on high for about 30-45 seconds for each side.
  2. Drain and rinse jackfruit and add to an instant pot. Mash the jackfruit with a potato masher until it starts to pull apart (should look similar to pulled pork).
  3. Add all of the BBQ sauce ingredients into the instant pot and then sauté for 5 mins, stirring occasionally. 
  4. Assemble tacos using the BBQ jackfruit as the base, then add your favorite toppings! Get creative and have fun!
