Buenos dias! Nutritious, delicious, South of the Border breakfast in a superfoodie tortilla. What’s not to like? Kick off the day with a wholesome treat that the whole family will love.

1 Original Cauliflower Tortilla
2 eggs (scrambled)
1/2 cup cherry tomatoes
1 avocado (sliced)
1 tablespoon avocado oil
1 slice low fat cheese
Cooking Instructions
  1. Remove 1 frozen Original Cauliflower Tortilla from pouch and place remaining tortillas back in the freezer.
  2. Place frozen tortilla in center of skillet. Heat on HIGH* for 30-45 seconds.
  3. Use spatula or tongs to flip the tortilla and heat on HIGH* for 30-45 seconds, or until desired crispness is reached.
  4. Carefully remove tortilla from skillet with spatula or tongs.
  5. In a pan, heat avocado oil and scramble two eggs and set aside.
  6. Place tortilla on a plate add cheese, eggs, avocado and tomatoes.
  7. Serve warm.
