Would you believe us if we said cauliflower-based brownies were better than the real thing? Well, one bite of these fudgy chocolate bites and there will be no convincing necessary. Thanks to the CAULIPOWER Cauliflower-Based Baking Mixthe world can now enjoy guilt-free brownies that are packed with cauliflower and loaded with vitamin C. Yup. We're serious. 

1 cup CAULIPOWER Cauliflower-Based Baking Mix (Original)
1/2 cup (1 stick) butter
1 1/2 cups sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup unsweetened cocoa powder
1/2 cup semi-sweet chocolate chip morsels (optional)
1/2 cup chopped nuts (optional)
Cooking Instructions
  1. Preheat oven to 350°F.
  2. Grease an 8 or 9-inch square baking pan; set aside.
  3. Melt butter in medium saucepan on medium-low heat, stirring occasionally. Remove from heat; stir in sugar until blended. (This will cool the butter enough so that when adding the eggs, they will not curdle.)
  4. Add eggs, one at a time, mixing well after each addition.
  5. Stir in vanilla, and then gradually stir in baking mix and cocoa.
  6. Stir in chocolate morsels and/or nuts (if using).
  7. Pour batter into prepared pan and bake for 33-38 minutes or until top is firm to the touch and a wooden pick inserted near center comes out clean.
  8. Remove from oven and cool completely in pan on wire rack. Cut into squares. Store in tightly covered container at room temperature.
