This Winter season, warm up with a veggie root pizza that will leave you feeling like a well-seasoned chef in the kitchen. This simple and colorful pie is perfect for those days when you want to impress yourself with something a little extra...without spending an extra three hours in the kitchen!

Ingredients

  • 1 Cauliflower Pizza Crusts
  • 1 cup sweet potato lentil hummus
  • 3/4 cup cheese, shredded
  • 1 cup button mushrooms, sliced
  • 4 small red onions, 150 grams, quartered
  • 2 small beets, very thinly sliced
  • 1 small fennel bulb, thinly sliced
  • handful of torn kale leaves
  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • salt and pepper to taste

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Remove CAULIPOWER Plain Crust from freezer and top with half the hummus and vegetables. 
  3. Cook the pizza for 13-15 minutes or until the crust is golden and cheese is melted.
  4. Mix the kale with the oil, vinegar, salt, and pepper, using your hands to massage it for a couple of minutes, and top the pizza with it.
  5. Serve immediately.
