Sweet PotaTOASTS Eggs Benedict

Step up your morning routine with this easy DIY 'Eggs Benedict' featuring our Sweet PotaTOASTS.

2 slices CAULIPOWER Sweet PotaTOASTS
2 pieces sliced ham
2 eggs
2 egg yolks
3 cups water
¼ lemon, juiced
¼ cup salted butter, melted
1 pinch salt
Cooking Instructions


  1. 1. Preheat oven to 425 degrees. 
  2. 2. Cook 2 Sweet PotaTOASTS for 15-18 minutes
  3. 3. Bring 3 cups water to boil, and place 2 eggs. Boil for 6-7 minutes. Remove from heat immediately and run under cold water.
  4. 4. Beat egg yolks, lemon juice, and salt together in a micowave-safe bowl until smooth
  5. 5. Slowly ad melted butter into egg yolk mixture while whisking.
  6. 6. Heat mixture in microwave for 15-20 seconds.
  7. 7. Top each cooked Sweet POTATOAST with sliced ham, peeled soft boiled egg, and a drizzle of sauce. 
  8. 8. Serve immediately.
