Dill Chicken Bites Spring Salad

Spring is here, and so is your new favorite salad! This veggie-packed plate with our Dill Chicken Bites is light, crisp, and full of flavor!

Ingredients

  • 8-12 pieces All Natural Chicken Bites, Dill
  • 1 package butter lettuce
  • 1 cucumber, thinly sliced
  • 2 rainbow carrots, thinly sliced
  • 1 watermelon radish, thinly sliced
  • 1 daikon radish, thinly sliced
  • 1/3 cup English peas
  • 6-8 sugar snap peas, halved
  • 3 eggs, hardboiled
  • 1 tbsp fresh dill + more to garnish
  • 1/4 cup plain whole milk yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 garlic clove, grated
  • 1/2 tsp onion powder
  • splash of pickle juice

Cooking Instructions

  1. Cook Dill Chicken Bites according to package instructions. Once cooked, let cool slightly before chopping into medium pieces.
  2. While Chicken Bites are cooking, make a base of butter lettuce on a large platter or bowl.
  3. Top with fresh peas, rainbow carrots, cucumber, radish, hard boiled eggs, sugar snap peas, and Chicken Bites.
  4. Make the creamy dill dressing by combining yogurt, mayonnaise, lemon juice, garlic, onion powder, pickle juice, and dill to a bowl.
  5. Drizzle it on top of the salad and enjoy!
