Who says you can't put meat on CAULIPOWER? Not us! Especially if the chicken has a bit of kick to it like this one!

Ingredients

  • 1 2 Cauliflower Crusts
  • 1-2 chicken breasts
  • 1/2 package taco seasoning mix
  • 1-2 jalepeños (sliced; seeds removed)
  • 1 cup shredded mozzarella
  • 1 bunch of fresh cilantro and/or red chili flakes

Directions

  1. Preheat oven to 425°.
  2. Sauté the chicken with the taco seasoning mix and a few teaspoons of water.
  3. Remove CAULIPOWER crust from the freezer.
  4. Add a light layer of cheese, followed by the chicken and sliced jalapeños. Sprinkle light additional cheese over just some of the chicken/jalapeños.
  5. Bake for 12-14 minutes or until cheese is bubbling and crust starts to brown.
  6. Finish with chopped cilantro and/or red chili flakes.
  7. Serve immediately.
