Pesto Zoodles with Chicken Tenders

Pesto zoodles + CAULIPOWER's Spicy(ish) Chicken Tenders = easy dinner win!

Ingredients

  • 4-5 pieces All Natural Spicy(ish) Chicken Tenders
  • 1 tbsp olive oil
  • 6 oz zucchini spirals
  • 2 tsp lemon zest
  • 3 tbsp sun dried tomatoes in oil, chopped
  • ½ cup basil pesto
  • Salt and pepper, to taste
  • Parmesan cheese, to garnish

Cooking Instructions

  1. Cook CAULIPOWER Chicken Tenders according to package instructions. Meanwhile, lightly sauté the zucchini spirals with oil in a skillet over medium heat.
  2. Cook the zucchini 5-7 minutes, or until tender. Season to taste with salt and pepper, add lemon zest, then remove from the heat and toss with pesto.
  3. Chop the cooked chicken tenders into bite sized pieces then add pesto zoodles to a bowl and enjoy with sun dried tomatoes, the chopped chicken, and parmesan cheese!
