Ingredients

  • 6-8 All Natural Chicken Bites, Original
  • 1 cup brussels sprouts, sliced lengthwise
  • ½ cup sweet potato, cubed
  • 2 cups curly kale, massaged
  • ½ apple, chopped
  • ¼ cup crumbled goat cheese
  • ⅓ cup wild rice, cooked
  • 1 tbsp almonds, toasted and roughly chopped
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 garlic clove, grated
  • 1 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • Salt and pepper to taste

Cooking Instructions

  1. Preheat the oven to 400°F.
  2. On a baking sheet, toss brussels sprouts, sweet potato, olive oil, salt and pepper together to coat. Add the chicken bites to the same sheet and bake for 20 minutes flipping everything half way.
  3. Whisk together dressing ingredients and set aside until ready to assemble.
  4. To assemble the bowl, start with a base of kale, wild rice, the roasted veggies, chicken bites, apples, goat cheese, almonds, and drizzle with dressing. Toss together and enjoy!
