This Mediterranean Chicken Tender Salad is loaded with crisp veggies, tangy feta, and our golden, gluten-free chicken tenders made with REAL chicken for the perfect bite—no boring salads here!

Ingredients

  • 6 pieces All Natural Chicken Tenders
  • 1 cup cherry tomatoes, quartered
  • 1 cup cucumber, cubed
  • 1 cup red onion, diced
  • a generous drizzle of olive oil
  • juice of half a lemon
  • 1 cup cubed feta
  • salt & pepper to taste
  • Greek vinaigrette dressing, to taste
  • 1 cup cooked wild rice, cooled slightly
  • 1/2 teaspoon garlic powder

Cooking Instructions

  1. Preheat the oven to 400°F. Combine the rice, 1 tbsp olive oil, salt, pepper, a squeeze of lemon juice and garlic powder.
  2. Spread in an even layer on a small baking sheet. Bake for 20-25 minutes, tossing halfway through, until deep golden brown and crisp.
  3. Cook the chicken tenders according to package instructions. Once cooked, let cool slightly before chopping into medium pieces.
  4. To a large bowl add the tomatoes, cucumber, red onion and feta. Toss well with olive oil, lemon juice and season to taste with salt and pepper.
  5. Top with the crispy rice and chicken tenders. Serve topped with crumbled feta and your favorite Greek dressing.
