The BERRYlicious Feta Loaded Pizza!

Ingredients

  • Cauliflower Pizza Crust
  • 1 tsp olive oil
  • 1/2 cup red onion, sliced
  • 1 1/2 tbsp honey
  • 1/4 tsp red pepper flakes
  • pinch of salt
  • 3/4 cup blueberries
  • 1/3 cup feta
  • 1/3 cup ricotta
  • arugula, for garnish

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Heat olive oil in a small pan over medium heat. Then, add red onions, red pepper flakes, and salt, cooking until onions are soft. Mix in honey and remove from heat.
  3. Remove CAULIPOWER Cauliflower Crust from freezer, remove packaging, and bake directly on the middle rack of the oven for 3-5 minutes.
  4. While CAULIPOWER Cauliflower Crust bakes, mix feta and ricotta in a small bowl until well combined.
  5. Remove CAULIPOWER Cauliflower Crust from oven, and top with cheese mixture. Then, layer on caramelized onions and fresh blueberries.
  6. Bake for about 10 minutes or until edges are crispy and blueberries are about ready to burst.
  7. Remove from oven, garnish with arugula, slice and serve immediately.
