Blueberry Pizza with Whipped Cottage Cheese & Caramelized Shallots

Add a little sweetness to your week with this Blueberry Caramelized Shallot Pizza!

  • 1 Cauliflower Pizza Crusts
  • 2 tbsp olive oil
  • 3 shallots
  • 1 cup blended cottage cheese
  • 1 cup fresh blueberries
  • 1/2 cup grated parmesan cheese
  • salt and pepper, to taste

Cooking Instructions

  1. Preheat your oven to 400°F.
  2. Spread the shallots evenly on a baking sheet lined with parchment paper.
  3. Bake for 20-25 minutes, or until the shallots are softened, golden brown, and slightly crisp around the edges.
  4. Then, preheat the oven to 425 degrees F.
  5. Brush the top of the crust with 1 tablespoon of olive oil.
  6. Bake for 8-10 minutes, flipping halfway, or until golden brown and crispy. Remove from the oven and let cool slightly.
  7. Spread the blended cottage cheese evenly over the CAULIPOWER crust. Top with the caramelized shallots and fresh blueberries.
  8. Bake the pizza in the preheated oven for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly.
  9. Let the pizza cool slightly before slicing. Sprinkle generously with freshly grated parmesan cheese. Serve warm and enjoy!
