Chicken Bite Breakfast Burrito

Everyone loves a breakfast burrito 🌯 but we're taking this up a notch by adding our Chicken Bites for even more flavor!

Ingredients

  • 3-4 All Natural Chicken Bites
  • 1 large flour tortilla
  • 2 eggs soft scrambled
  • 1/3 cup shredded mozzarella
  • 1 1/2 tbsp maple syrup
  • 1 tbsp green onions, sliced
  • 1/2 avocado thinly sliced
  • 2 tbsp black beans
  • 1/3 cup sweet potato, cubed
  • 1/4 tsp chipotle powder
  • 1 tbsp sriracha mayo
  • pinch of salt

Cooking Instructions

  1. Preheat oven to 425 degrees. Roast cubed sweet potato with chipotle powder, a pinch of salt, 1/2 tbsp maple syrup, and a little olive oil. Cook for about 30 minutes or until sweet potato is tender.
  2. Air fry CAULIPOWER Chicken Bites according to package instructions.
  3. Soft scramble 2 eggs then set aside.
  4. Once chicken is done cooking, toss it with the remaining maple syrup and a pinch of sliced green onions.
  5. Add tortilla to a large pan over medium heat, top with mozzarella, roasted sweet potato, and black beans. Add the lid and cook until cheese is melted.
  6. Remove from heat, add 3 small dollops of sriracha mayo, sliced avocado, soft scrambled egg, maple chicken bites, green onion and a pinch of salt.
  7. Roll your burrito and toast the bottom in a pan until lightly browned. Slice in half and enjoy!
