Chicken Pesto Pizza

Light, fresh, and full of flavor, this Chicken Pesto Pizza on our gluten-free cauliflower crust will be your new summer go-to!
Ingredients
- 1 Cauliflower Pizza Crust
- 2 cups fresh basil leaves, packed + more to garnish
- ½ cup toasted pine nuts
- 4-6 cloves garlic
- 2 cups grated Parmesan cheese
- ½ cup extra virgin olive oil
- 1 cup cooked chicken, sliced
- 1 - 1 ½ cup mozzarella cheese
- red pepper flakes, for garnish
- salt and pepper, to taste
Cooking Instructions
- In a food processor, combine the pine nuts, garlic, basil leaves, and parmesan cheese. Pulse until coarsely chopped.
- With the food processor running, slowly drizzle in the olive oil until the pesto is smooth.
- Add 1 cup parmesan cheese and pulse a few more times until just combined.
- Season generously with salt and freshly ground black pepper to taste. Set aside.
- Preheat your oven according to the CAULIPOWER Cauliflower Crust package instructions.
- Spread a generous layer of the homemade pesto sauce evenly over the crust.
- Scatter the sliced chicken over the pesto.
- Distribute the fresh mozzarella and remaining parmesan evenly over the pizza.
- Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Slice and enjoy!
