Carefully slice CAULIPOWER Cauliflower Crust into 12 equal triangles and place on a parchment lined baking sheet. Brush olive oil on each triangle, front and back.
Bake for 7-8 minutes, flipping halfway, until golden brown and crispy.
While the chips bake, make the Mango Pico De Gallo. In a small bowl, mix together all of the ingredients. Squeeze the lime juice and sprinkle the cilantro all over the salsa and mix until well combined.
