EGG-cellent Brekkie Pizza

  • Cauliflower Pizza Crusts
  • 1 tsp olive oil
  • 4 oz breakfast sausage
  • 1/3 cup cherry tomatoes, halved
  • 1/3 cup asparagus, sliced
  • 2 cups baby spinach
  • 3 eggs
  • crushed red pepper flakes
  • salt and pepper, to taste

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Add olive oil to a large skillet, and cook sausage over medium heat. Break up any large pieces as it cooks. Once sausage is golden brown and cooked through, transfer to a plate and set aside.
  3. In the same pan, add the tomatoes and asparagus. Cook for 1-2 minutes or until asparagus turns bright green. Add spinach to the pan, and cook until slightly wilted. Season veggies with salt and pepper to taste, then remove from heat.
  4. Grab CAULIPOWER Cauliflower Crust from freezer and remove all packaging. Top crust with veggies and breakfast sausage. Cook pizza directly on the middle rack of the oven for 3 minutes.
  5. Remove pizza from oven, and carefully crack eggs over the top. Cook for an additional 12-15 minutes, or until the egg whites are set, and the yolks are still runny.
  6. Garnish pizza with red pepper flakes, and enjoy!
