‘A Partridge in a Pear Tree’ is the first in our ‘12 Days of Pizza’ holiday recipe series, and it’s not what you might expect. It’s better. This delectable dessert pie is a year-round delight that checks a lot of boxes. Sweet? Check. Veggies? Check. Easy-to-make? Check (only takes 45 minutes). Scrumptious? Check for yourself.

Gluten-Free

Ingredients

  • 1 Cauliflower Pizza Crusts
  • 1 yellow onion, sliced
  • 1 tablespoon + 1 teaspoon olive oil
  • 3 sprigs fresh thyme, chopped
  • 1/2 cup shredded fresh mozzarella
  • 1/2 cup crumbled gorgonzola
  • 1 pear, sliced
  • 1/2 cup roasted chicken, thickly sliced
  • Salt and pepper to taste

Cooking Instructions

  1. Preheat oven to 425°F.
  2. Sauté onion in 1 tablespoon of oil for 10 minutes until translucent.
  3. Remove your CAULIPOWER crust from the box and the plastic wrapping, and place on a clean surface.
  4. Pause to reflect on just how tasty this is going to be. Mmmmm.
  5. Brush entire CAULIPOWER crust with 1 teaspoon of oil, and top with fresh thyme. Sprinkle salt and pepper over your crust to taste (yes, you can do the thing where you sprinkle from high up with flourish).
  6. Top with the two cheeses, because one cheese never really feels like enough.
  7. Beautifully arrange pears, onions, and chicken around the pie (or not beautifully...we won't judge) and bake for 12 - 15 minutes, or until crust appears golden brown.
