Ingredients

  • 1 bag All Natural Spicy(ish) Chicken Tenders
  • 1/2 cup dry brown rice
  • 1 medium (1 cup, 133g), diced into 1” chunks sweet potatoes
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • 1 medium head, chopped (2 cups) romaine lettuce
  • 1 large ears (1 cup, 157g), kernels shaved fresh corn
  • 2 (400g), diced avocados
  • ½ cup, chopped cilantro
  • ½ cup plain nonfat greek yogurt
  • 1 pepper, minced chipotle pepper in adobo
  • 1 clove, minced garlic
  • 1 tablespoon lime juice

Cooking Instructions

  1. Preheat oven to 425°.
  2. Cook brown rice according to package directions, set aside.
  3. Dice sweet potato into 1/2” chunks and place into a bowl. Drizzle with 2 tablespoons olive oil. Add spices and toss to coat evenly. Place on sheet pan and bake for 30 minutes, set aside.
  4. Cook CAULIPOWER® Spicy Chicken Tenders according to package instructions. Let cool and cut into strips, set aside.
  5. Trim, chop and clean romaine, set aside. Drain and rinse the black beans and set aside. Chop cilantro and set aside.
  6. Make chipotle dressing: Add ½ cup of yogurt into a bowl. Add chipotle, garlic, lime, and whisk to combine. Set aside.
  7. Build the bowl: Place the romaine and brown rice mix in the bottom of the bowl. Add sweet potatoes, corn, black beans, sliced chicken tenders, diced avocado, cilantro and drizzle with chipotle dressing. Enjoy!
