Strawberry Rhubarb "Pie"

Turn pizza night into a pie night with this Strawberry Rhubarb "Pie" on our Plain Crust 🍓🥧

Ingredients

  • 1 2 Cauliflower Crusts
  • 1 cup rhubarb, chopped
  • 1 cup strawberries, quartered
  • 1 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp powdered sugar
  • vanilla ice cream
  • edible flowers, to garnish
  • mint leaves, to garnish

Directions

  1. Preheat the oven to 425°F.
  2. In a bowl, mix together rhubarb, strawberries, sugar, cornstarch, and lemon juice. Pour mixture in the center of a CAULIPOWER pizza crust.
  3. Bake on a parchment lined baking sheet for 17 minutes, until the crust is golden and the fruit is soft and tender.
  4. Garnish with fresh mint leaves, edible flowers, a scoop of vanilla ice cream, and powdered sugar. Slice and enjoy!
