Balsamic Glazed Mushroom Pesto Pizza

This personal pizza pizza is a unique twist on a time-honored favorite. The sharp taste of the balsamic glaze complements the earthiness of the mushroom and creaminess of the pesto. It really hits the spot!

Ingredients

  • 1 2 Cauliflower Crusts
  • 2 cups mozzarella cheese, shredded
  • shiitake mushrooms
  • enoki mushrooms
  • chantrelle mushrooms
  • 2 cups basil pesto
  • 2 cups balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tsp minced garlic
  • 1 tbsp olive oil

Directions

  1. Preheat oven to 425 degrees. (conventional oven recommended!)
  2. Remove CAULIPOWER Cauliflower Crust from box, overwrap, and cardboard. Scoop pesto and spread onto the crust. Layer with mozzarella cheese
  3. Sauté garlic and olive oil in a pan. Then, add chopped mushrooms and sauté to taste.
  4. Place mushrooms on the pizza and cook directly on the middle rack until cheese is golden brown and crust is crispy, about 12-15 minutes.
  5. While pizza is cooking, combine balsamic vinegar with brown sugar in a saucepan. Cook balsamic glaze over medium heat, stirring constantly until mixture reaches desired consistency.
  6. Let glaze and pizza cool a bit. Then, drizzle balsamic glaze over pizza.
