Cilantro Lime CAULIPOWER “Rice” is inspired by my love for Chipotle's cilantro rice.

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 3 garlic cloves, minced
  • 2 scallions, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • kosher salt, to taste
  • pepper, to taste

Cooking Instructions

  1. Heat a sauté pan over medium heat, add olive oil, scallions and garlic. Sauté for 3 minutes until soft.
  2. Raise heat to medium-high. Then, add CAULIPOWER Sesame Citrus Style Rice to pan.
  3. Cover and cook 6-7 minutes stirring frequently until riced cauliflower is slightly crispy on the outside, but cooked thoroughly. Season with salt and pepper.
  4. Remove from heat, and add to medium bowl. Toss with fresh cilantro and lime juice to taste.
