A tastier, healthy spin on fajitas for when you want something unBOWLievably easy AND delicious!

  • delicata squash, sliced
  • yellow onion, sliced
  • yellow beets, sliced
  • bell peppers, quartered
  • mushroom powder
  • chili powder
  • cumin
  • vegetable oil
  • handful of greens
  • radishes, thinly sliced (for garnish)

Cooking Instructions

  1. Toss delicata squash, onions, beets, and peppers, with vegetable oil, mushroom powder, chili powder, and cumin.
  2. Add veggies to grill, and cook on a nice, low heat, until caramelized.
  3. While veggies cook, add CAULIPOWER Baja Style Riced Cauliflower to a pan with a little vegetable oil. As Riced Cauliflower cooks, add greens, and continue warming through.
  4. Warm up CAULIPOWER Cauliflower Tortillas on the grill or in a skillet.
  5. Serve warm Tortillas with Riced Cauliflower and grilled veggies. Garnish with radishes, greens, and enjoy!
