A fresh feast from the Middle East, this flatbread starts with our ready-to-use crust and layers creamy bell pepper hummus, roasted eggplant, avocado, red shishito peppers, olives, pea shoots, dukkah and a glug of olive oil, a drizzle of lemon tahini sauce finishes it perfectly.



  • 1 Cauliflower Pizza Crusts
  • 1/2 cup orange bell pepper hummus
  • garlic (chopped)
  • 1 eggplant (sliced and roasted)
  • 1 avocado (peeled & sliced)
  • handful red shishito peppers
  • 1/2 cup green olives
  • 1/2 cup pea shoots
  • 4 tablespoons sunflower seed dukkah (seed and spice blend)
  • 1 teaspoon lemon juice
  • 1 tablespoon tahini sauce

Cooking Instructions

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper. Slice the eggplant in half lengthwise, then cut each half into quarters lengthwise. Roast in the preheated oven until soft and golden brown, 25 to 30 minutes.
  3. Remove from oven and set aside.
  4. Preheat the oven to 400°F.
  5. Remove your CAULIPOWER pizza crust from the box and the plastic wrapping and place on a clean surface.
  6. Spread the store-bought orange bell pepper hummus evenly. Add all the ingredients except lemon juice and tahini sauce.
  7. Place in over and bake for 15 minutes.
  8. Remove from oven drizzle lemon juice and tahini sauce, serve hot.
