Remove your CAULIPOWER Cauliflower Tortillas from the pack and put on a sheet tray and spray lightly with cooking oil.
Carefully drape each CAULIPOWER Cauliflower Tortillas over two bars of oven rack. Bake the tortillas at 375°F for about 7-10 minutes, or until crispy and golden-brown.
Remove from oven and set aside.
In a blender, puree jalapeño, salt, 1 tsp of cilantro, lime juice, salt and pepper. Add puree to yogurt and mix well.
Place fish fillets on a plate and sprinkle with salt and pepper.
Heat a large nonstick skillet coated with cooking spray over medium-high heat.
Sear fish on pan for 5 minutes on each side, or until fish flakes easily when tested with a fork.
Build the taco with a layer of purple cabbage, seared fish and a generous drizzle of jalapeño lime sauce.
