"Rice" Seafood Paella

Spice things up with this super simple seafood paella!

Ingredients

  • 1 cup Curried Riced Cauliflower
  • 2 tbsp olive oil
  • 1/2 lb medium shrimp, peeled and deveined
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, mined
  • 1/4 tsp paprika
  • 1/4 tsp ground turmeric
  • 1/2 can diced tomatoes
  • 1 sausage link of your choice, cubed
  • 1/2 cup frozen green peas, thawed
  • 1 cup cooked clams (optional)
  • cilantro for garnish

Cooking Instructions

  1. In a pan, heat 1 tbsp oil over medium-high heat. Cook shrimp until just pink on both sides, 4-5 minutes. Transfer to plate, and season with paprika and turmeric.
  2. Add some more oil to pan, and cook sausage for 4-5 minutes. Transfer to plate, and season with paprika and turmeric.
  3. Add remaining tbsp oil to pan, and cook onion 3-4 minutes. Add garlic and rice for 2 minutes.
  4. Stir in tomatoes and peas. Cook 1 minute.
  5. Stir in shrimp and clams. (optional)
  6. Garnish with cilantro, and serve immediately.
 Close
