BAJA-Mazing Breakfast Bowl

Ingredients

  • 1 container Baja Style Riced Cauliflower
  • 1 cup cooked lentils, drained
  • 1 1/2 tbsp olive oil
  • 1/2 yellow onion, thinly sliced
  • 1 clove garlic, minced
  • 1/3 cup parsley, finely chopped
  • 2 eggs
  • 2 1/2 tbsp harissa sauce
  • 1/4 cup pine nuts, toasted
  • paprika, to taste
  • salt, to taste
  • pepper, to taste

Cooking Instructions

  1. Cook CAULIPOWER Baja Style Riced Cauliflower in an oiled skillet over medium-high heat for 7-8 minutes or until cooked through.
  2. Mix in lentils. Cover, and set aside.
  3. In another skillet, heat olive oil over medium heat. Add onions, and cook until deeply caramelized and golden brown. Then, add garlic, and continue cooking for about 2 minutes.
  4. Remove from heat and add half the onions to the rice and lentil mixture along with parsley and salt to taste.
  5. Wipe the skillet clean, coat with cooking spray, and heat pan over medium. Crack eggs into skillet, and cook until whites are set. Season eggs with salt, pepper, and paprika.
  6. Divide CAULIPOWER Baja Style Riced Cauliflower mixture between two bowls. Top each bowl with a fried egg, harissa sauce, toasted pine nuts, and remaining caramelized onions. Serve immediately!
