Baja Style Stuffed Peppers

Ingredients

  • 1 container Baja Style Riced Cauliflower
  • 4 bell peppers, seeded and halved
  • 1/2 cup onion, diced
  • 1 lb lean beef, turkey, chicken, or plant based meat, ground
  • 1 can diced tomatoes
  • 1 tsp garlic, minced
  • 3 tbsp taco seasoning
  • 1/4 cup cheddar jack cheese blend, shredded
  • optional toppings: avocado, cilantro, guacamole, pico de gallo, sour cream, sliced jalapeño

Cooking Instructions

  1. Preheat oven to 350°F.
  2. Place peppers in a baking dish cut sides up.
  3. Heat a nonstick pan over medium heat. Add onions, and cook until translucent.
  4. Add ground meat, and break into crumbles. Cook for about 3 minutes.
  5. Add tomatoes, garlic, taco seasoning and CAULIPOWER Baja Style Riced Cauliflower. Mix well.
  6. Cook until the beef is cooked through, about 5 minutes. Then, remove from heat.
  7. Scoop the meat mixture and juices into peppers.
  8. Cover with foil and bake for about 30 minutes.
  9. Remove foil, sprinkle peppers with shredded cheese, and bake for 2 more minutes, until cheese is melted.
  10. Add your choice of toppings and enjoy!
 Close
