Lemon, Pea, Pancetta Pasta

Thanks to our Cauliflower Pappardelle, this delicious dish is packed with veggies, ready in minutes, and oh so delish!
Ingredients
- 8 ounces pancetta, diced
- 1/2 onion, chopped
- 10 ounce bag fresh or frozen peas
- 2 garlic cloves, minced
- 1/3 cup parmesan, grated + extra for garnish
- 1/2 lemon, juiced
- salt and pepper, to taste
- salted pasta water, to desired consistency
Cooking Instructions
- Sauté pancetta and onion in a pan until crisp. Add peas and garlic and sauté for 3 minutes.
- While skillet ingridients cook, bring a pot of salted water to a boil and add CAULIPOWER Cauliflower Pappardelle Pasta.
- Once Pasta is finished cooking, reserve pasta water, drain the rest, and toss into skillet with other ingredients.
- Stir in parmesan and lemon juice, adding pasta water until the dish reaches desired consistency.
- Toss ingredients together, season with salt and pepper to taste, and garnish with more parmesan on top.
