Carrot Top Pesto Pasta

With so many great ways to celebrate our Earth, try this creative and delicious way to reduce food waste. Turning carrot tops into pesto and reviving mushy tomatoes by blistering them with oil is a combo that truly cannot be TOPped!

Ingredients

  • 1 package Linguine Cauliflower Pasta
  • 1 packed cup carrot tops
  • 1/4 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1/2 cup walnuts
  • 3 cloves garlic
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast
  • 1/4 cup olive oil + 2 tbsp olive oil + more as needed to thin
  • 1 cup grape tomatoes
  • salt and pepper, to taste

Cooking Instructions

  1. Add carrot tops, parsley, cilantro, walnuts, garlic, lemon juice, nutritional yeast, 1/4 cup olive oil, and salt to a blender or food processor. Add more olive oil as needed if it is not blending smoothly.
  2. Cook CAULIPOWER Cauliflower Linguine according to package instructions.
  3. Drain water, add blended carrot top pesto, and toss until well combined.
  4. Add tomatoes and 2 tbsp olive oil to a pan over medium heat. Cover and cook for ten minutes, stirring occasionally. Add salt and pepper to taste.
  5. Top Cauliflower Linguine with blistered tomatoes, and enjoy!
