In a large skillet over medium-high heat, add olive oil. Cook sausage in oil for 10 minutes until brown then transfer sausage to a bowl and set aside.
In the same pan over medium heat, add the onions and 1 tbsp of butter. Sauté for 3 minutes before adding the apples and garlic. Cook for another 2 minutes then add the sausage back in and the herbs. Season with salt and pepper then set aside.
Bring a pot of water to a boil and cook CAULIPOWER Elbows Pasta for 3 minutes. Save 1 cup of pasta water before straining.
In a pan over medium heat, add the remaining 2 tbsp butter, heavy cream, whole milk, white cheddar, parmesan, garlic powder, onion powder, white pepper, and salt and whisk together for 3-5 minutes to thicken.
Add in cooked pasta and sausage apple mixture. Toss the pasta, season to taste with more salt and pepper, and add 1 tbsp reserved pasta water at a time to reach designed sauce consistency. Serve warm with extra fresh herbs on top!
