Creamy Pasta Limone

  • 1 package Linguine Cauliflower Pasta
  • 2 tbsp olive oil
  • 1 lemon, 1 tbsp zested and 1/4 cup juiced
  • 1 cup reserved pasta water
  • 3 basil leaves, ripped
  • 1/4 cup pecorino romano, grated
  • salt and pepper, to taste

Cooking Instructions

  1. Bring a salted pot of water to boil and cook CAULIPOWER linguine for 3 minutes, reserve 1 cup of pasta water, then drain and rinse cooked linguine under cold water.
  2. Add the oil, lemon zest and juice to a pan over medium-high heat. Toss in the pasta and stir in reserved pasta water. Cook for 1-2 minutes until liquid reduces.
  3. Add pecorino cheese and basil then cook for another minute.
  4. Season to taste and garnish with more pecorino and lemon zest. Enjoy!
