This Noodle-Free Sweet Potato Lasagna recipe featuring our Sweet PotaTOASTS is the perfect comfort meal.

  • 1 Tbsp olive oil
  • 1/2 cup tomato sauce
  • 3/4 cup shredded mozzarella
  • 2 cups ricotta
  • 1/4 cup basil, chopped
  • 2 garlic cloves, minced
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Cooking Instructions

  1. Preheat the oven to 425 degrees. 
  2. Mix ricotta, basil, garlic, salt, and pepper to create mixture.
  3. Lightly grease a baking dish with olive oil.
  4. Spread a thin layer of tomato sauce over the bottom of the dish.
  5. Layer with Sweet PotaTOAST slices, a layer of ricotta mixture, and another layer of tomato sauce.  
  6. Continue layering until you have about 1 inch left to the top.
  7. Sprinkle parmesan cheese.
  8. Bake for 20-30 minutes uncovered. If cheese starts to brown too much, cover with aluminum foil.
  9. Remove from oven and let cool for 15 minutes. Slice and serve immediately.
