Warm up with this SOUPerb plant-based tortilla soup recipe made with our cauliflower tortillas.

Ingredients

  • 1 medium onion, sliced
  • 5 cloves garlic, peeled
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 4 cups vegetable broth
  • 1 can fire roasted tomatoes
  • 2 bay leaves
  • avocado, cubed
  • 1 bunch cilantro
  • lime, for garnish
  • salt
  • pepper

Cooking Instructions

  1. Preheat oven to 425 degrees, and remove CAULIPOWER Cauliflower Tortillas from freezer to defrost.
  2. Cut tortillas into strips. Add half to a baking sheet, and bake for 5 minutes until crispy.
  3. Meanwhile, sauté onion, garlic, and spices in a nonstick or oiled pot until fragrant.
  4. Add broth, canned tomatoes, bay leaves, salt, pepper, half of the cilantro, and the uncooked tortilla strips to pot. Stir and bring to a boil.
  5. Once boiled, remove bay leaves and puree the broth using an inversion blender (or transfer to a heat-proof blender in batches and blend).
  6. Once broth is smooth, stir in avocado.
  7. Ladle soup into bowl and top with baked tortilla strips, cilantro, a squeeze of lime, and any of your other favorite toppings!
  8. Serve immediately!
