Spinach and Black Bean Quesadillas

  • 1 cup cheese, shredded
  • 1/4 cup black beans, rinsed and drained
  • 1/2 cup baby spinach, chopped
  • 2 tbsp salsa
  • optional topppings: guacamole, crema, cilantro

Cooking Instructions

  1. Top each CAULIPOWER Cauliflower Tortilla with 1/4 cup of the shredded cheese, then divide the black beans, chopped spinach and salsa between the two tortillas. Divide the remaining shredded cheese between the two tortillas, and add top tortillas to complete quesadillas.
  2. Warm oil in large skillet over medium heat. Add both quesadillas and cook. Flip after 2-3 minutes and continue cooking until cheese is melted and both sides are golden brown.
  3. Slice into wedges and garnish with your favorite toppings!
