Sweet Potato Eggs Benedict with Sweet PotaTOASTS

  • 2 pieces sliced ham
  • 2 eggs
  • 2 egg yolks
  • 3 cups water
  • 1/4 lemon, juiced
  • 1/4 cup salted butter, melted
  • 1 pinch salt

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Cook 2 Sweet PotaTOASTS for 15-18 minutes.
  3. Bring 3 cups water to boil, and place 2 eggs. Boil for 6-7 minutes. Remove from heat immediately. and run under cold water.
  4. Beat egg yolks, lemon juice, and salt together in a microwave-safe bowl until smooth.
  5. Slowly add melted butter into egg yolk mixture while whisking.
  6. Heat mixture in microwave for 15-20 seconds.
  7. Top each cooked Sweet POTATOAST with sliced ham, peeled soft boiled egg, and a drizzle of sauce. 
  8. Serve immediately.
