You’ll GREEKing love this delicious and easy salad recipe made with our healthier Chicken Tenders.
Ingredients
- 2 Chicken Tenders
- 1 cup lettuce, chopped
- 1 cucumber, chopped
- 1/2 cup tomatoes, sliced
- 1 tbsp olives, sliced
- 1/2 avocado, sliced
- 1 tbsp feta cheese, crumbled
- 1 tsp red wine vinegar
- 1 tsp olive oil
- fresh parsley, to taste
- salt, to taste
- pepper, to taste
- 1/2 lemon, juiced
Cooking Instructions
- Preheat oven to 425 degrees.
- Remove CAULIPOWER Chicken Tenders from freezer. Add to oven, and cook for 14-15 minutes, flipping halfway through for optimal crispy texture.
- While tenders cook, assemble your salad with: lettuce, cucumbers, tomatoes, olives, avocado, and feta cheese.
- Make red wine vinaigrette by combining red wine vinegar, olive oil, parsley, salt, pepper, and lemon.
- Remove CAULIPOWER Chicken Tenders from oven, let cool, and slice.
- Top your salad with cubed tenders and red wine vinaigrette.
