Ingredients

  • 2 Chicken Tenders
  • 1 cup lettuce, chopped
  • 1 cucumber, chopped
  • 1/2 cup tomatoes, sliced
  • 1 tbsp olives, sliced
  • 1/2 avocado, sliced
  • 1 tbsp feta cheese, crumbled
  • 1 tsp red wine vinegar
  • 1 tsp olive oil
  • fresh parsley, to taste
  • salt, to taste
  • pepper, to taste
  • 1/2 lemon, juiced

Cooking Instructions

  1. Preheat oven to 425 degrees.
  2. Remove CAULIPOWER Chicken Tenders from freezer. Add to oven, and cook for 14-15 minutes, flipping halfway through for optimal crispy texture.
  3. While tenders cook, assemble your salad with: lettuce, cucumbers, tomatoes, olives, avocado, and feta cheese.
  4. Make red wine vinaigrette by combining red wine vinegar, olive oil, parsley, salt, pepper, and lemon.
  5. Remove CAULIPOWER Chicken Tenders from oven, let cool, and slice.
  6. Top your salad with cubed tenders and red wine vinaigrette.
