Ingredients
1/2 butternut squash, cubed
1/2 white onion, roughly chopped
1 cup raw unsalted cashews, soaked in water overnight
Peel and cube butternut squash and roughly chop onion. Add to a bowl along with garlic, olive oil, salt and pepper and toss until evenly coated.
Transfer onto a baking sheet and roast in the oven for about 30 minutes or until tender and cooked through.
Bring a large pot of water to a boil and cook pasta according to package directions.
In a blender, add cashews, butternut squash, onion, garlic, nutritional yeast, vegetable broth, salt and pepper. Blend until a creamy consistency forms, and add more salt and pepper to taste.
Pour sauce over pasta and mix to coat evenly. Top with fresh parsley and enjoy!
