Season chicken with salt and pepper and cut into small strips. Chop, slice and dice all vegetables.
In a large stock pot, add olive oil and chopped garlic and sauté for 1-2 minutes.
Add chicken and cook for 5-7 minutes, stirring until cooked thoroughly. Then add onion, pepper, mushrooms, eggplant and zucchini and cook for several minutes.
Add tomatoes, tomato paste and chicken broth and stir together until it comes to a boil.
Turn down to a simmer and let cook for 1-2 hours stirring occasionally. Add chopped parsley and basil the last 15 minutes,.
Cook CAULIPOWER Pappardelle Cauliflower Pasta according to package instructions.
Plate CAULIPOWER Pappardelle Cauliflower Pasta and pour meat sauce on top.
Optional: Sprinkle grated parmesan cheese on top. Enjoy!
