This delicious and nutritious Vegan Pink Pasta made with our Cauliflower Linguine can't be BEET!

Ingredients

  • 2 small beets, peeled and chopped 
  • 1 garlic clove
  • 1 cup cashews, soaked for a few hours or boiled to soften 
  • 2 tbsp lemon juice
  • 1 tbsp nutritional yeast
  • 2 tbsp olive oil 
  • 1/4 tsp salt 
  • 1/4 tsp pepper
  • 3/4 cup vegetable broth + more as needed
  • parsley & beet hearts to garnish (optional)

Cooking Instructions

  1. Toss beets and garlic in olive oil. Add to a sheet pan and bake at 400 degrees for 25 minutes, until softened and starting to brown.
  2. Cook CAULIPOWER Cauliflower Linguine according to package directions.
  3. Add cooked beets, garlic, cashews, nutritional yeast, olive oil, lemon juice, salt, pepper, and vegetable broth to a blender and blend until smooth. Add more vegetable broth as needed to thin.
  4. Mix pink sauce with pasta, plate, and garnish with fresh parsley and beet hearts. (Use heart shaped cookie cutter on a thinly sliced beet.) Enjoy!
