Ingredients

  • 1 Cauliflower Pizza Crusts
  • 3 ears of sweet corn
  • 4 tbsp mayonnaise
  • 2 tsp fresh lime juice
  • 2 garlic cloves
  • 2 cups shredded cheese
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese
  • 1/4 cup cilantro leaves
  • pinch of cayenne pepper
  • lime wedges

Cooking Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, mayonnaise, lime juice, garlic, cayenne pepper, and chili powder. Season with salt and pepper to taste.
  3. Brush the CAULIPOWER crust with olive oil and then spread the elote mixture over the crust. Top with shredded cheese and corn.
  4. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  5. Remove from the oven and top with crumbled cotija cheese and fresh cilantro.
  6. Serve with lime wedges for squeezing over each slice.
